Skinny Chocolate Chip Pretzel Bars

Hi guys I’m Francesca, I would introduce myself more but hey, that’s why I have a Meet Francesca page right?

So let’s be honest with each other here.. Finding this recipe during my middle-of-the-night Pinterest searching had me drooling. Not literally. But how good do these sound? Cheesecake has to be one of my favorite desserts and for around 100 calories it sounds too good to be true.

In this post I will put these yummy cheesecake bars to the test and we will see how good they actually are.

THE INGREDIENTS

These were all my ingredients.

Crust:

  • 3cups pretzels
  • 1Tbs unsalted butter
  • 1 room temp. egg white
  • 2Tbs non-fat milk

Filling

  • 16oz fat free cream cheese ( I could only find 1/3 less fat)
  • 1/2c granulated sugar
  • 1 egg white room temp.
  • 1tsp cornstarch
  • 2tsp vanilla extract
  • 1/4c mini chocolate chips

The first thing it says to do is preheat your oven to 300 F , while that was heating up I greased my 8 inch square pan with some Trader Joe’s coconut oil spray (love that stuff 🙂 )

Next I prepared the crust by processing up my pretzels into a flour like consistency, then added the rest of my ingredients for the crust.  At this point you obviously need to mix it and here’s a tip, you’re gonna wanna use your hands trust me. Then just spread it in the bottom of your pan and bake for 8 min.

While that was baking I started on my filling, I creamed my cream cheese with the sugar then added the cornstarch, egg white and vanilla.  I also found some raspberries in the fridge that needed to be used so I threw a couple of those in there 🙂 it made it an adorable baby pink color.  After it was all mixed I folded in my chocolate chips and spread it over the crust once it was baked and cooled. You then want to bake that for around 25 minutes or until it only jiggles a little when you move it, mine took 30 but that could just be my oven.

Now the painful part, once it’s out of the oven get it to about room temperature and then cover it in plastic wrap so it can chill in the fridge for atleast 3 hours before serving. 😦

Overall these were so tasty, the cheesecake flavor was amazing but my crust was a little chewy which could have meant i did not grind my pretzels up enough. I definitely recommend this recipe 🙂
